Making halva, Gazo (Nougat), and various Kurdish sweets in Sulaymaniyah became famous during the beginning of the forties of the last century.

 

The equipment used for making these sweets has a history of more than 100 years. 

 

The sweets of Sulaymaniyah are known to have natural ingredients in their recipes used as (Gazo paste, black raisins, nuts, almonds, flowers, sugar and water... etc). 

 

Nougat which the Kurdish people call Gazo is a family of confections made with sugar or honey, roasted nuts, whipped egg whites, and sometimes chopped candied fruit. The consistency of nougat is chewy, and it is used in a variety of candy bars and chocolates. The word nougat comes from Occitan pan nogat, seemingly from Latin panis nucatus 'nut bread'. 

 

While Halva or Halwa refers to various local confection recipes in West Asia and its vicinity. The name is used for referring to a huge variety of confections, with the most geographically common variety based on toasted semolina.
